Ingredients

For the Filling:

  • ½ cup canned pumpkin puree (not pumpkin pie mix)

  • 3 oz (85 g) cream cheese, softened

  • 2 tbsp brown sugar

  • ½ tsp ground cinnamon

  • ¼ tsp ground nutmeg

  • ¼ tsp ground ginger (optional)

  • Pinch of salt

  • ½ tsp vanilla extract

For the Dough:

  • 1 can (8 oz) refrigerated crescent roll dough (8-count)

  • 1 egg, beaten (for egg wash)

Optional Topping:

  • Coarse sugar or cinnamon sugar for sprinkling


Instructions

1. Preheat Oven:

  • Preheat oven to 375°F (190°C).

  • Line a baking sheet with parchment paper.

2. Make the Filling:

  • In a bowl, combine pumpkin puree, cream cheese, brown sugar, cinnamon, nutmeg, ginger (if using), salt, and vanilla.

  • Mix until smooth and fully blended. Set aside.

3. Prepare the Dough:

  • Unroll the crescent dough and separate into 8 triangles.

  • On a clean surface, gently press or stretch each triangle to widen it slightly.

4. Fill and Shape:

  • Place about 1 tablespoon of filling near the wider end of each triangle.

  • Fold the edges in slightly and roll up from the wide end to the tip, enclosing the filling.

  • Curve the sides inward slightly to resemble a pumpkin shape.

  • Use a small knife to score shallow vertical lines across the top to mimic pumpkin ridges (optional).

5. Add the Stem (Optional):

  • If desired, insert a small pretzel stick or a pumpkin seed into the top after baking to act as a stem.

6. Egg Wash and Bake:

  • Brush each pumpkin crescent with beaten egg.

  • Sprinkle with coarse sugar or cinnamon sugar if desired.

  • Bake for 12–15 minutes, or until golden brown and puffed.

7. Cool and Serve:

  • Let cool slightly on the pan before serving warm.

  • These are best served fresh but can be stored in an airtight container for 1–2 days.
