Salisbury Steak (Bobby Flay–Inspired)

Ingredients

For the steaks

  • 1½ lb ground beef (80/20 for best flavor)
  • ½ cup breadcrumbs or crushed crackers
  • 1 egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, finely minced
  • ½ small onion, very finely chopped
  • Salt and black pepper
  • 1 tablespoon olive oil

For the mushroom-onion gravy

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 large onion, thinly sliced
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce (deepens flavor)
  • Fresh thyme or parsley (optional)
  • Salt and pepper to taste

Instructions

1. Make the Salisbury steaks

  1. In a large bowl, gently mix ground beef, breadcrumbs, egg, Worcestershire, Dijon, garlic, onion, salt, and pepper.
  2. Do not overmix — this keeps the steaks tender.
  3. Shape into oval patties.

2. Sear

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Sear patties for 3–4 minutes per side until browned.
  3. Remove and set aside (they will finish cooking in the gravy).

3. Build the gravy

  1. In the same skillet, add butter and olive oil.
  2. Cook onions until caramelized (8–10 minutes).
  3. Add mushrooms and cook until browned.
  4. Stir in garlic and cook 30 seconds.
  5. Sprinkle flour over the mixture and cook 1 minute.
  6. Slowly whisk in beef broth, Worcestershire, and soy sauce.
  7. Simmer until thickened.

4. Finish

  1. Return steaks to the pan.
  2. Spoon gravy over them.
  3. Cover and simmer gently for 10–15 minutes until cooked through.
  4. Finish with herbs and adjust seasoning.

Serve With

  • Creamy mashed potatoes
  • Buttered egg noodles
  • Green beans or roasted carrots
