Mexican Carne Asada Marinade

Ingredients

  • ½ cup fresh orange juice
  • ¼ cup fresh lime juice
  • ¼ cup olive oil
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • ½ tsp dried oregano (Mexican oregano if available)
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 2 tbsp chopped fresh cilantro
  • Optional: 1–2 tbsp soy sauce or Maggi seasoning (common in Northern Mexico)

Instructions

  1. Whisk all ingredients together in a bowl.
  2. Place flank or skirt steak in a large zip-top bag or shallow dish.
  3. Pour marinade over the meat, turning to coat.
  4. Marinate 2–8 hours (don’t go longer—citrus can make it mushy).
  5. Grill over high heat (2–4 minutes per side) to medium-rare.
  6. Rest 5 minutes, slice against the grain, and serve.

  • Pat the steak dry before grilling for a better sear.
  • Finish with a squeeze of lime and flaky salt.
