Makes: ~18–24 crisps (depending on size)
🍴 Ingredients:
For the Filling:

1 tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced

5 oz (about 5 cups) fresh spinach, chopped (or use 10 oz frozen, thawed & squeezed dry)

½ tsp salt

¼ tsp black pepper

¼ tsp nutmeg (optional but traditional)

1 tsp dried oregano or chopped fresh dill

½ cup crumbled feta cheese
-
¼ cup ricotta or cream cheese (for creaminess, optional)

1 egg (lightly beaten, to help bind)
For Assembly:

1 package phyllo dough or puff pastry, thawed

¼ cup melted butter or olive oil (for brushing)

Optional: sesame seeds or nigella seeds for topping
🔪 Instructions:
1. Make the Filling:

Heat olive oil in a skillet over medium heat.

Sauté onion for 3–4 minutes until soft, then add garlic and cook 30 seconds.

Add spinach, season with salt, pepper, nutmeg, and oregano/dill. Cook until wilted (or warmed through if using frozen).

Let mixture cool slightly, then stir in feta, optional ricotta, and egg.
2. Assemble the Crisps:
If Using Phyllo Dough:

Preheat oven to 375°F (190°C).

Cut phyllo sheets into strips (about 3–4 inches wide).

Brush one strip with melted butter or oil, then place another strip on top.

Spoon 1 tbsp of filling at the end of the strip.

Fold into triangles, like folding a flag, encasing the filling.
