🫓 Loaded Mediterranean Flatbread with Whipped Feta & Fresh Herbs

Serves: 4–6 as an appetizer or 2 as a main
🍴 Ingredients:
For the Flatbread Base:

2–4 flatbreads, naan, or pita rounds

1 tbsp olive oil (for brushing)

Optional: sprinkle of za’atar or garlic powder
Whipped Feta Spread:

6 oz (170g) feta cheese (block-style, not pre-crumbled)

2 oz (60g) cream cheese or Greek yogurt
-
1 tbsp olive oil
-
1 tbsp lemon juice
-
1 small clove garlic, grated or minced (optional)

Black pepper, to taste
Toppings:

1 cup cherry tomatoes, halved
-
½ cucumber, diced
-
¼ cup Kalamata olives, sliced
-
¼ small red onion, very thinly sliced
-
1–2 tbsp capers (optional)
-
¼ cup crumbled feta
-
Fresh herbs: parsley, dill, mint, or basil (chopped)
-
Optional: drizzle of honey, balsamic glaze, or hot chili oil
🔪 Instructions:
1. Make the Whipped Feta:

In a food processor, blend feta, cream cheese/yogurt, olive oil, lemon juice, and garlic until smooth and creamy (1–2 minutes).

Add black pepper to taste. Chill until ready to use.
2. Toast the Flatbread:

Brush flatbreads with olive oil.

Toast in a hot skillet, oven (400°F), or grill for 2–3 minutes per side until golden and slightly crisp.

Optional: Sprinkle with za’atar before toasting for extra flavor.
3. Assemble the Flatbread:

Spread a thick layer of whipped feta over each warm flatbread.

Scatter on cherry tomatoes, cucumber, olives, red onion, and capers.

Sprinkle with crumbled feta and plenty of fresh herbs.

Optional drizzle: a touch of honey (for sweet-savory contrast), balsamic glaze, or chili oil for heat.
4. Serve:

Slice into wedges and serve immediately — best while the bread is still warm!
