Oh yes — Easy Peasy Chicken Pot Pie 🥧✨
Creamy, cozy, and satisfying… but simple enough for a weeknight. This version skips the complicated crusts and long prep — you’ll have it in the oven in no time!

Here’s a foolproof, super-easy version that still tastes homemade 👇

🐔 Easy Peasy Chicken Pot Pie

🥣 Ingredients

For 4–6 servings

  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works perfectly!)

  • 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)

  • 1 can (10.5 oz) cream of chicken soup (or cream of mushroom, if you prefer)

  • ½ cup chicken broth or milk (for creamier filling)

  • 1 tsp onion powder

  • ½ tsp garlic powder

  • Salt & black pepper to taste

  • 1 sheet puff pastry or 1 refrigerated pie crust

  • 1 egg, beaten (for egg wash, optional)

🧑‍🍳 Instructions

  1. Preheat the oven:

    • 400°F (200°C).

  2. Make the filling:

    • In a large bowl, combine the chicken, frozen vegetables, cream of chicken soup, broth (or milk), and seasonings.

    • Stir until evenly mixed and creamy.

  3. Assemble:

    • Pour the filling into a greased 9-inch pie dish, casserole dish, or oven-safe skillet.

    • Top with the puff pastry (or pie crust), pressing the edges to seal.

    • Cut a few small slits in the top for steam to escape.

    • Brush with egg wash if you want a golden, glossy crust.

  4. Bake:

    • Bake 25–30 minutes, until the crust is golden brown and the filling is bubbling at the edges.

  5. Cool slightly and serve:

    • Let rest 5–10 minutes before serving so the filling thickens a bit.

🍴 Tips & Variations

  • Extra creamy? Add a few tablespoons of cream cheese or a splash of heavy cream to the filling.

  • No crust fuss? Pour the filling into a casserole dish and top with canned biscuit dough instead — instant “biscuit pot pie”!

  • Veggie boost: Add sautéed mushrooms or onions for extra flavor.

  • Make-ahead: Assemble, cover, and refrigerate for up to 24 hours before baking.

🧡 Shortcut hack:

Use rotisserie chicken + frozen veggies + store-bought crust = pot pie ready in under an hour (and tastes like you made it from scratch).

Would you like me to give you a mini version (like muffin-tin or hand-held chicken pot pies)? Those are perfect for snacks, lunches, or meal prep!
