Melt-in-Your-Mouth Garlic Parmesan Chicken Meatloaf

Servings: 4–6

Prep Time: 15 minutes

Cook Time: 45–55 minutes

Total Time: 1 hour 10 minutes (including resting)

Ingredients

For the Meatloaf:

  • 500 grams ground chicken (preferably thigh for moisture)

  • 1/2 cup breadcrumbs (plain or Italian-style)

  • 1/2 cup grated Parmesan cheese

  • 1/4 cup whole milk

  • 2 large eggs

  • 4 cloves garlic, minced

  • 1/2 small onion, finely grated or minced

  • 2 tablespoons chopped fresh parsley (or 1 tablespoon dried)

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon onion powder

For the Topping:

  • 1/4 cup grated Parmesan cheese

  • 2 tablespoons unsalted butter, melted

  • 1/2 teaspoon garlic powder

  • 1 tablespoon chopped parsley (for garnish, optional)

Instructions

1. Preheat the Oven:

Preheat your oven to 180°C (350°F). Lightly grease a loaf pan or line a baking sheet with parchment paper.

2. Prepare the Meatloaf Mixture:

In a large mixing bowl, combine breadcrumbs and milk. Let sit for 2–3 minutes to soften.
Add the ground chicken, eggs, Parmesan cheese, garlic, onion, parsley, salt, pepper, oregano, thyme, and onion powder.
Mix gently using clean hands or a spatula until just combined. Do not overmix, as this can make the meatloaf dense.

3. Shape and Bake:

Transfer the mixture to the prepared pan or shape it into a loaf on the baking sheet.
Bake uncovered for 35–40 minutes.

4. Add Garlic Parmesan Topping:

In a small bowl, mix the melted butter, grated Parmesan cheese, and garlic powder.
Remove the meatloaf from the oven after 35–40 minutes and spread the topping evenly over the surface.
Return to the oven and bake for another 10–15 minutes, or until the internal temperature reaches 74°C (165°F) and the top is golden.

5. Rest and Serve:

Let the meatloaf rest for 5–10 minutes before slicing. Garnish with additional parsley if desired.
Serve warm with mashed potatoes, roasted vegetables, or a fresh green salad.

Tips for Best Results

  • Do not overmix the meatloaf mixture—just enough to bring the ingredients together.

  • For extra moisture, you may add 2 tablespoons of sour cream or mayonnaise to the mix.

  • Ground turkey can be substituted for chicken if preferred.
