Cracker Barrel Meatloaf Recipe

1½ pounds ground beef (preferably 80/20)

1 cup crushed Ritz crackers (about 25 crackers)

½ cup finely chopped onion

½ cup finely chopped green bell pepper

½ cup milk

2 large eggs, lightly beaten

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon garlic powder

¼ teaspoon dried thyme (optional)

1½ cups shredded sharp cheddar cheese
Topping

½ cup ketchup
-
¼ cup brown sugar
-
1 teaspoon yellow mustard
Instructions

Preheat the oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan or line it with parchment paper.

Prepare the meat mixture:
In a large mixing bowl, combine the ground beef, crushed crackers, chopped onion, bell pepper, milk, eggs, salt, pepper, garlic powder, thyme (if using), and shredded cheddar cheese. Mix gently with your hands or a spoon until evenly combined. Do not overmix, as this can make the loaf dense. -
Shape the loaf:
Press the mixture evenly into the prepared loaf pan. -
Make the topping:
In a small bowl, whisk together the ketchup, brown sugar, and mustard until smooth. Spread half of this mixture evenly over the top of the meatloaf. Reserve the rest for later. -
Bake:
Place the loaf in the preheated oven and bake for 45 minutes. Remove, spread the remaining topping over the loaf, and return to the oven. -
Continue baking for another 20–25 minutes, or until the internal temperature reaches 160°F (71°C) and the topping is bubbly.

Rest and serve:
Allow the meatloaf to rest for 10 minutes before slicing. Serve warm with mashed potatoes, green beans, or your preferred sides.
