Cinnamon French Toast Bites
Ingredients

1 loaf of bread (brioche or challah works best), cut into 1-inch cubes

3 large eggs

½ cup milk

2 tablespoons granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

¼ teaspoon salt

2 tablespoons butter, for cooking

Optional toppings: maple syrup, powdered sugar, fresh fruit
Instructions
1. Prepare the Egg Mixture

In a medium bowl, whisk together eggs, milk, sugar, vanilla extract, cinnamon, and salt until smooth.
2. Coat the Bread

Add bread cubes to the egg mixture, tossing gently to coat evenly. Let sit for 2–3 minutes to soak slightly.
3. Cook the Bites

Heat a large skillet over medium heat and add butter.

Once melted, add coated bread cubes in a single layer (cook in batches if necessary).

Cook for 2–3 minutes per side, turning occasionally, until golden brown and slightly crispy on the edges.
4. Serve

Transfer to a plate and serve warm.

Drizzle with maple syrup, dust with powdered sugar, or top with fresh fruit.
Tips

Use slightly stale bread for best results — it holds up better and soaks up the custard without falling apart.

For extra cinnamon flavor, toss cooked bites in a cinnamon-sugar mixture before serving.

These can also be baked: spread coated cubes on a greased baking sheet and bake at 375°F (190°C) for 12–15 minutes, flipping halfway through.
