🍗 Air Fryer Chicken Rissoles

Ingredients (Makes about 10–12 rissoles)

  • 1 lb (500 g) ground chicken (or turkey)

  • 1 small onion, finely grated or minced

  • 1 carrot, finely grated

  • 1 small zucchini, grated and squeezed dry

  • 2 cloves garlic, minced

  • 1 egg, lightly beaten

  • ½ cup breadcrumbs (plain or panko)

  • 2 tbsp fresh parsley (or 1 tsp dried parsley)

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika (optional)

  • 1 tbsp Worcestershire sauce or soy sauce (adds great flavor)

  • Olive oil spray


Instructions

1. Prepare the Mixture

  1. In a large bowl, combine ground chicken, onion, carrot, zucchini, garlic, egg, breadcrumbs, herbs, and seasonings.

  2. Mix until everything is evenly combined — use your hands for best results.

  3. If the mixture feels too soft, add a few extra tablespoons of breadcrumbs.


2. Shape the Rissoles

  • Divide the mixture into 10–12 portions and shape into small, flat patties (about 2½ inches wide).

  • Place them on a plate and refrigerate for 10–15 minutes — this helps them hold their shape while cooking.


3. Preheat the Air Fryer

  • Preheat your air fryer to 375°F (190°C) for about 3 minutes.


4. Cook the Rissoles

  1. Lightly spray the air fryer basket with olive oil.

  2. Arrange the rissoles in a single layer (don’t overcrowd — cook in batches if needed).

  3. Air fry for 10–12 minutes, flipping halfway through, until golden brown and cooked through (internal temp should reach 165°F / 74°C).


5. Serve

  • Serve warm with:

    • Mashed potatoes or roasted veggies

    • A simple garden salad

    • Sweet chili sauce, BBQ sauce, or ranch dressing for dipping
