🥘 Carne Guisada con Carne Molida y Papas

Ingredients

  • 1½ lbs ground beef (carne molida)

  • 2 tbsp vegetable oil or lard

  • ½ large onion, chopped

  • 2 cloves garlic, minced

  • 2 medium potatoes, peeled and diced (½-inch cubes)

  • 1 (14.5 oz) can diced tomatoes (or 3 fresh Roma tomatoes, chopped)

  • ½ cup tomato sauce (or more for saucier version)

  • 1 cup beef broth or water

  • ½ tsp ground cumin

  • 1 tsp chili powder

  • ½ tsp paprika

  • Salt and pepper, to taste

  • Optional: 1 small jalapeño or serrano pepper, chopped (for heat)

  • Fresh cilantro for garnish


Instructions

  1. Brown the beef:
    Heat oil in a large skillet or saucepan over medium heat.
    Add ground beef, breaking it up as it cooks, until browned.
    Drain excess grease if needed.

  2. Sauté aromatics:
    Add chopped onion and garlic. Cook for 2–3 minutes, until fragrant and softened.

  3. Add potatoes and seasonings:
    Stir in diced potatoes, cumin, chili powder, paprika, salt, and pepper.
    Mix well so potatoes are coated with flavor.

  4. Add tomatoes and broth:
    Stir in diced tomatoes, tomato sauce, and broth (or water).
    Bring to a boil, then reduce heat to low, cover, and simmer 20–25 minutes, stirring occasionally, until potatoes are tender and the sauce thickens.

  5. Adjust & finish:
    Taste and adjust seasoning — add salt, pepper, or a bit more broth if too thick.
    Garnish with chopped cilantro.


🌯 Warm Flour Tortillas

Ingredients:

  • 2 cups all-purpose flour

  • ½ tsp salt

  • ¾ tsp baking powder

  • 3 tbsp lard, shortening, or vegetable oil

  • ¾ cup warm water (more or less as needed)

Instructions:

  1. In a bowl, whisk together flour, salt, and baking powder.

  2. Cut in lard or oil until crumbly.

  3. Gradually add warm water, mixing until a soft dough forms.

  4. Knead on a lightly floured surface for 2–3 minutes until smooth.

  5. Divide into 8 balls, cover, and rest 15–20 minutes.

  6. Roll each ball into an 8-inch circle.

  7. Cook on a hot, dry skillet (medium heat) for 30–45 seconds per side until golden spots form.

  8. Keep warm in a towel until ready to serve.
