Rolled Taquitos fresh Salsa and Guacamole

Perfect combo! 🌮✨ Here’s how to make crispy rolled taquitos (either chicken, beef, or potato filling) along with fresh salsa and homemade guacamole — just like at a taquería. Everything’s made from scratch, fresh, and full of flavor.


🌯 Rolled Taquitos (Tacos Dorados)

Ingredients

(Makes about 12 taquitos)

For the Filling (choose one or mix):

  • 2 cups shredded cooked chicken, ground beef, or mashed potatoes

  • ½ tsp salt

  • ½ tsp cumin

  • ½ tsp chili powder or paprika

  • 1 clove garlic, minced

  • 2 tbsp onion, finely chopped

  • Optional: ¼ cup shredded cheese

Other:

  • 12 corn tortillas

  • Oil for frying (vegetable or canola)


🧑‍🍳 Instructions

  1. Warm the tortillas:
    Heat tortillas on a skillet or in the microwave wrapped in a damp towel for about 30 seconds to make them pliable.

  2. Fill and roll:
    Place about 2 tbsp filling along one edge of each tortilla and roll tightly.
    Secure with a toothpick if needed.

  3. Fry until golden:
    Heat about ½ inch of oil in a skillet over medium-high heat.
    Fry 3–4 taquitos at a time, seam side down, turning occasionally, until golden brown and crispy (about 2–3 minutes per side).
    Drain on paper towels and sprinkle lightly with salt.

(For a lighter version: brush with oil and bake at 425°F / 220°C for 15–20 minutes until crisp.)


🍅 Fresh Salsa (Salsa Fresca / Pico de Gallo)

Ingredients:

  • 4 ripe Roma tomatoes, diced

  • ½ small white onion, finely chopped

  • 1 jalapeño or serrano pepper, minced (seeds removed for less heat)

  • ¼ cup chopped fresh cilantro

  • Juice of 1 lime

  • Salt to taste

Instructions:
Mix all ingredients in a bowl. Taste and adjust salt or lime juice as needed.
Let sit 10 minutes for flavors to develop.


🥑 Simple Guacamole

Ingredients:

  • 2 ripe avocados

  • 1 small tomato, diced

  • 2 tbsp finely chopped onion

  • 1 tbsp chopped cilantro

  • Juice of ½ lime

  • Salt to taste

  • Optional: minced jalapeño for spice

Instructions:
Mash avocados in a bowl until chunky-smooth. Stir in remaining ingredients.
Adjust lime and salt to taste. Serve immediately.


🧄 Serving Suggestions

  • Pile taquitos on a plate and top with:
    🥬 shredded lettuce or cabbage
    🧀 crumbled queso fresco
    🍅 a spoonful of salsa
    🥑 a dollop of guacamole
    🍶 drizzle of crema or sour cream
