🍽️ Serves:
4–6 people (makes about 8 tacos)
⏱️ Time:
Prep: 10 min | Cook: 15 min | Total: ~25 min
Ingredients
For the beef:
-
1 lb ground beef
-
1 Tbsp olive oil (optional, if beef is lean)
-
1 small onion, finely chopped
-
2–3 cloves garlic, minced
-
2 Tbsp taco seasoning (or homemade blend: chili powder, paprika, cumin, salt, oregano)
-
½ cup tomato sauce or salsa
-
Salt & pepper, to taste
For the tacos:
-
8 taco shells (hard, soft, or Doritos-style nacho shells!)
-
1½ cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
-
1 cup tortilla chips, crushed slightly
-
½ cup sour cream
-
½ cup guacamole or sliced avocado
-
½ cup diced tomatoes or pico de gallo
-
¼ cup sliced jalapeños (optional)
-
¼ cup chopped cilantro
-
Lime wedges, for serving
👩🍳 Instructions
1. Cook the beef
-
Heat a skillet over medium-high heat.
-
Add olive oil, then ground beef and onion. Cook until browned, 5–6 minutes.
-
Add garlic and taco seasoning, stir 30 seconds until fragrant.
-
Stir in tomato sauce or salsa; simmer 2–3 minutes until thickened.
-
Taste and adjust seasoning.
2. Warm taco shells
-
Heat taco shells according to package instructions (oven or skillet) so they’re nice and crisp.
3. Assemble the nacho tacos
-
Spoon seasoned beef into taco shells.
-
Sprinkle with shredded cheese while warm (so it melts slightly).
-
Add a handful of crushed tortilla chips for that nacho crunch.
-
Top with sour cream, guacamole, tomatoes/pico, jalapeños, and cilantro.
-
Finish with a squeeze of fresh lime juice.
💡 Tips & Variations
-
Extra cheesy: Layer cheese on the shell before and after the beef — double melt!
-
Nacho cheese drizzle: Melt ½ cup Velveeta or nacho cheese sauce with 2 Tbsp milk and drizzle over tacos.
-
Protein swaps: Use ground turkey, shredded chicken, or refried beans for a lighter version.
-
Crunchy twist: Use crushed Doritos instead of tortilla chips for a full “nacho explosion.”
-
Party idea: Set up a Nacho Taco Bar with all the toppings for DIY fun!
