Ingredients

  • 2 ½ cups (200 g) sweetened shredded coconut

  • 1 can (14 oz / 396 g) sweetened condensed milk

  • 1 teaspoon vanilla extract

  • Pinch of salt

Optional Add-ins:

  • 1/2 cup chocolate chips or chopped nuts

  • 1/4 teaspoon almond extract

  • 1/4 cup dried fruit (chopped)


Instructions

1. Preheat Oven

  • Preheat oven to 175°C (350°F).

  • Line an 8×8-inch (or similar size) baking pan with parchment paper or grease lightly.


2. Mix Ingredients

  1. In a medium bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and salt.

  2. Stir until well mixed.

  3. If using add-ins like chocolate chips or nuts, fold them in now.


3. Spread in Pan

  • Transfer the mixture into the prepared pan.

  • Press down gently and evenly with a spatula or damp fingers.


4. Bake

  • Bake for 20–25 minutes, or until the top is lightly golden brown.

  • Edges will be firmer and caramelized.


5. Cool and Cut

  • Let cool completely in the pan.

  • Lift out using parchment (if used), and cut into bars or squares.


Serving Suggestions

  • Serve as-is, or drizzle with melted chocolate for extra richness.

  • Ideal as a tea-time sweet or holiday treat.


Storage

  • Store in an airtight container at room temperature for up to 1 week.

  • Can be refrigerated for longer freshness.

  • Freeze for up to 2 months.
