Here’s a creative and savory twist on a classic roulade — perfect for a festive dinner or an elegant family meal:

🍠 Sweet Potato Rocambole (Roulade) with Minced Meat Filling

This dish features a soft, baked sweet potato base rolled around a flavorful minced meat filling. It’s eye-catching, gluten-free (no flour needed in the roll!), and full of sweet-and-savory balance.

🧾 Ingredients

🔸 For the Sweet Potato Base:

  • 3 medium sweet potatoes, peeled and boiled

  • 2 eggs

  • ½ cup grated Parmesan or other firm cheese

  • Salt & black pepper, to taste

  • Optional: pinch of nutmeg or smoked paprika

🔸 For the Minced Meat Filling:

  • 1 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 lb (450g) ground beef, turkey, or chicken

  • 2 tbsp tomato paste or crushed tomatoes

  • Salt & pepper to taste

  • ½ tsp oregano or thyme

  • Optional: ¼ cup chopped parsley or spinach for color

🔪 Instructions

1. Prepare the Sweet Potato Base

  • Boil or steam sweet potatoes until soft. Drain and mash well.

  • Mix in eggs, Parmesan, salt, pepper, and spices. The mixture should be spreadable but not runny.

  • Line a baking sheet (roughly 12×10 inches / 30×25 cm) with parchment paper. Grease lightly.

  • Spread the sweet potato mixture evenly over the parchment to form a rectangle.

  • Bake at 375°F (190°C) for about 20–25 minutes, or until set and firm to the touch.

2. Cook the Minced Meat Filling

  • While the base bakes, heat oil in a skillet. Sauté onion until soft.

  • Add garlic and cook 1 minute.

  • Add ground meat, season with salt, pepper, herbs, and tomato paste.

  • Cook until browned and thickened. Stir in herbs or spinach if using. Let cool slightly.

3. Assemble the Rocambole

  • Once the base is baked, let it cool for 5 minutes (just until it’s handleable).

  • Gently spread the meat mixture evenly across the surface.

  • Starting from the short side, roll it up carefully using the parchment paper to help.

  • Transfer to a baking dish seam-side down.

4. Optional Second Bake

  • Sprinkle top with more cheese if desired.

  • Bake again at 375°F (190°C) for 10–15 minutes to heat through and crisp the top slightly.

🍽️ Serving Suggestions:

  • Slice into thick rounds and serve with a green salad, steamed veggies, or a dollop of garlic yogurt sauce.

  • Great warm or at room temp — even better the next day!

✅ Tips:

  • For a vegetarian version: Use lentils, mushrooms, or plant-based mince.

  • Want a spicier twist? Add chili flakes or chopped jalapeños to the filling.

  • Make it cheesy: Add a layer of shredded cheese on top of the meat before rolling.
