Slow Cooker Chicken and Dumplings!

π§Ύ Ingredients (Serves 6)
For the Stew:

1.5 to 2 lbs boneless, skinless chicken breasts or thighs

1 medium onion, diced

3 carrots, sliced

2 celery stalks, sliced

3 cloves garlic, minced
-
1 tsp salt

Β½ tsp black pepper

Β½ tsp dried thyme
-
Β½ tsp poultry seasoning (optional but great)

1 can (10.5 oz) cream of chicken soup (or homemade)

4 cups low-sodium chicken broth
-
1 tbsp butter (optional, for richness)
For the Dumplings:

1 cup all-purpose flour
-
2 tsp baking powder
-
Β½ tsp salt
-
2 tbsp cold butter
-
Β½ cup milk
(Or use refrigerated biscuit dough for a shortcut β see note below)
π₯ Instructions
1. Add Everything to the Slow Cooker

Place chicken, veggies, garlic, herbs, cream of chicken soup, and broth in the slow cooker. Add butter if using.

Stir gently to combine. Cook on:

Low for 6β7 hours

High for 3β4 hours

2. Shred the Chicken
-
Remove chicken, shred with forks, and return to the pot. Stir to combine.
3. Make the Dumplings

In a bowl, whisk flour, baking powder, and salt.

Cut in butter with a fork or fingers until crumbly.

Stir in milk just until a sticky dough forms. Do not overmix.
4. Add Dumplings to Slow Cooker

Drop small spoonfuls (about 1 tbsp each) of dough onto the hot stew.

Cover and cook on high for 1 more hour, until dumplings are cooked through and fluffy. Donβt lift the lid during this time!
π₯ Shortcut: Use Refrigerated Biscuit Dough

Cut each biscuit into quarters and drop into the stew during the last 60β90 minutes of cooking on high.

Stir once, then cook uncovered or partially covered for best texture.

Add frozen peas or corn in the last 15 minutes if desired.

If your stew feels too thin, mix 1 tbsp cornstarch + 1 tbsp water and stir in before adding dumplings.
