Slowcooker Chicken and Dumpling

A cozy, set-it-and-forget-it version of a classic comfort food:
Slow Cooker Chicken and Dumplings!
Tender chicken in a creamy, savory stew topped with fluffy dumplings — all made in your crockpot with minimal effort.


🍗🥣 Slow Cooker Chicken and Dumplings


🧾 Ingredients (Serves 6)

For the Stew:

  • 1.5 to 2 lbs boneless, skinless chicken breasts or thighs

  • 1 medium onion, diced

  • 3 carrots, sliced

  • 2 celery stalks, sliced

  • 3 cloves garlic, minced

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp dried thyme

  • ½ tsp poultry seasoning (optional but great)

  • 1 can (10.5 oz) cream of chicken soup (or homemade)

  • 4 cups low-sodium chicken broth

  • 1 tbsp butter (optional, for richness)

For the Dumplings:

  • 1 cup all-purpose flour

  • 2 tsp baking powder

  • ½ tsp salt

  • 2 tbsp cold butter

  • ½ cup milk

(Or use refrigerated biscuit dough for a shortcut — see note below)


🥄 Instructions

1. Add Everything to the Slow Cooker

  • Place chicken, veggies, garlic, herbs, cream of chicken soup, and broth in the slow cooker. Add butter if using.

  • Stir gently to combine. Cook on:

    • Low for 6–7 hours

    • High for 3–4 hours

2. Shred the Chicken

  • Remove chicken, shred with forks, and return to the pot. Stir to combine.

3. Make the Dumplings

  • In a bowl, whisk flour, baking powder, and salt.

  • Cut in butter with a fork or fingers until crumbly.

  • Stir in milk just until a sticky dough forms. Do not overmix.

4. Add Dumplings to Slow Cooker

  • Drop small spoonfuls (about 1 tbsp each) of dough onto the hot stew.

  • Cover and cook on high for 1 more hour, until dumplings are cooked through and fluffy. Don’t lift the lid during this time!


🥄 Shortcut: Use Refrigerated Biscuit Dough

  • Cut each biscuit into quarters and drop into the stew during the last 60–90 minutes of cooking on high.

  • Stir once, then cook uncovered or partially covered for best texture.


✅ Tips

  • Add frozen peas or corn in the last 15 minutes if desired.

  • If your stew feels too thin, mix 1 tbsp cornstarch + 1 tbsp water and stir in before adding dumplings.

  • For richer flavor, swap some broth for half-and-half after cooking.
