Instructions

1. Make the Sauce

  1. In a medium saucepan, melt butter over medium heat.

  2. Stir in flour and cook 1–2 minutes, until slightly golden.

  3. Gradually whisk in milk or chicken broth, stirring constantly until smooth.

  4. Add sour cream, 1 cup cheese, cumin, chili powder, salt, and pepper.

  5. Cook for 2–3 minutes until sauce thickens slightly. Remove from heat.


2. Prepare the Filling

  1. In a mixing bowl, combine shredded chicken, sour cream, 1 cup cheese, green chilies, garlic powder, onion powder, salt, and pepper.

  2. Mix until well combined.


3. Assemble the Enchiladas

  1. Preheat oven to 375°F (190°C).

  2. Spread a small amount of sauce on the bottom of a 9×13-inch baking dish.

  3. Place about ¼ cup of filling on each tortilla, roll it up, and place seam-side down in the baking dish.

  4. Pour the remaining sauce over the top and sprinkle with extra cheese.


4. Bake

5. Serve

  • Garnish with chopped cilantro or green onions.

  • Serve with a side of guacamole, sour cream, or a fresh salad.
