Here’s a fast, flavor-packed, and low-carb recipe for Garlic Butter Steak Bites with Zucchini Noodles (Zoodles). It’s seared steak in rich garlic butter, paired with tender-crisp zucchini noodles for a meal that’s satisfying and light. Ready in under 30 minutes!


🥩 Garlic Butter Steak Bites with Zucchini Noodles

🍽️ Serves: 2–4

🧂 Ingredients:

For the Steak Bites:

  • 1½ lbs sirloin steak, ribeye, or NY strip, cut into 1-inch cubes

  • Salt & black pepper, to taste

  • 1 tsp paprika (optional)

  • 1 tbsp olive oil

  • 2 tbsp butter

  • 4 cloves garlic, minced

  • 1 tbsp fresh parsley, chopped (for garnish)

  • Optional: ½ tsp red pepper flakes for heat

For the Zucchini Noodles:

  • 3–4 medium zucchini, spiralized

  • 1 tbsp olive oil or butter

  • 1 clove garlic, minced

  • Salt & pepper, to taste

  • Optional: a squeeze of lemon or a sprinkle of Parmesan


🔪 Instructions:

🔥 1. Prepare Zucchini Noodles:

  1. Spiralize zucchini and pat them dry with paper towels to reduce moisture.

  2. In a large skillet over medium heat, sauté garlic in 1 tbsp olive oil or butter for 30 seconds.

  3. Add zoodles, season with salt and pepper, and cook 1–2 minutes, just until tender-crisp.

  4. Remove from heat and set aside (don’t overcook — they can get soggy).


🥩 2. Cook the Steak Bites:

  1. Pat steak cubes dry and season with salt, pepper, and paprika.

  2. Heat 1 tbsp olive oil in a large skillet over high heat.

  3. Add steak in a single layer — don’t crowd the pan (cook in batches if needed).

  4. Sear for 2–3 minutes, then flip and sear another 2–3 minutes until browned and medium-rare.

  5. Reduce heat to medium, add butter and garlic to the pan.

  6. Stir and baste the steak with garlic butter for 1 minute.

  7. Remove from heat.


🥣 3. Assemble:

  • Plate zucchini noodles and top with garlic butter steak bites.

  • Drizzle extra pan butter over everything.

  • Garnish with fresh parsley and a pinch of chili flakes or Parmesan if desired.


📝 Tips:

  • Want a full meal? Add cherry tomatoes or sautéed mushrooms to the zoodles.

  • Use a cast iron skillet for the best sear on the steak.

  • If you like your steak more done, cook 1–2 minutes longer after searing.
