-
1 small onion, finely chopped
-
2 cloves garlic, minced
-
2 tbsp tomato paste
-
4 cups beef broth (or chicken broth)
-
1½ cups whole milk (or half-and-half for creamier texture)
-
1½ cups elbow macaroni (uncooked)
-
2 cups shredded cheddar cheese
-
1 tsp Worcestershire sauce
-
½ tsp paprika
-
Salt & pepper, to taste
-
1 tbsp butter (optional for richness)
-
Optional garnishes: chopped parsley, crumbled bacon, or extra shredded cheese
👩🍳 Instructions:
1. Brown the Beef:
-
In a large pot or Dutch oven over medium heat, cook the ground beef and onion until beef is browned and onion is soft, about 6–8 minutes.
-
Drain excess grease if needed.
2. Add Garlic & Tomato Paste:
-
Stir in garlic and tomato paste. Cook for 1–2 minutes to develop flavor.
3. Simmer the Broth & Pasta:
-
Pour in the broth, milk, Worcestershire, paprika, and a pinch of salt and pepper.
-
Stir in the uncooked macaroni.
-
Bring to a gentle boil, then reduce heat and simmer for 10–12 minutes, stirring occasionally, until pasta is cooked.
4. Add Cheese & Finish:
-
Stir in the cheddar cheese until melted and the soup is creamy.
-
Add butter for extra richness (optional).
-
Taste and adjust seasoning as needed.
5. Serve Hot:
-
Ladle into bowls and garnish with more cheese, bacon, or parsley if desired.
-
Serve with crusty bread or cornbread for a hearty meal!
📝 Tips:
-
For a thicker soup, simmer a few extra minutes uncovered.
-
For more veggies, stir in diced carrots, celery, or frozen corn with the onions.
-
Swap ground beef for ground turkey or plant-based crumbles if preferred.
