🍲 One-Pot Macaroni Cheeseburger Soup

🧂 Ingredients:

  • 1 lb ground beef (80/20 or lean)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 tbsp tomato paste

  • 4 cups beef broth (or chicken broth)

  • 1½ cups whole milk (or half-and-half for creamier texture)

  • 1½ cups elbow macaroni (uncooked)

  • 2 cups shredded cheddar cheese

  • 1 tsp Worcestershire sauce

  • ½ tsp paprika

  • Salt & pepper, to taste

  • 1 tbsp butter (optional for richness)

  • Optional garnishes: chopped parsley, crumbled bacon, or extra shredded cheese


👩‍🍳 Instructions:

1. Brown the Beef:

  • In a large pot or Dutch oven over medium heat, cook the ground beef and onion until beef is browned and onion is soft, about 6–8 minutes.

  • Drain excess grease if needed.


2. Add Garlic & Tomato Paste:

  • Stir in garlic and tomato paste. Cook for 1–2 minutes to develop flavor.


3. Simmer the Broth & Pasta:

  • Pour in the broth, milk, Worcestershire, paprika, and a pinch of salt and pepper.

  • Stir in the uncooked macaroni.

  • Bring to a gentle boil, then reduce heat and simmer for 10–12 minutes, stirring occasionally, until pasta is cooked.


4. Add Cheese & Finish:

  • Stir in the cheddar cheese until melted and the soup is creamy.

  • Add butter for extra richness (optional).

  • Taste and adjust seasoning as needed.


5. Serve Hot:

  • Ladle into bowls and garnish with more cheese, bacon, or parsley if desired.

  • Serve with crusty bread or cornbread for a hearty meal!

  • For a thicker soup, simmer a few extra minutes uncovered.
