📝 Ingredients:

For the Meatloaf:

  • 1 lb ground beef (preferably 80/20)

  • 1 cup breadcrumbs (plain or Italian)

  • 1 egg, beaten

  • 1 medium onion, finely chopped

  • 1/4 cup chopped green bell pepper (optional)

  • 1/4 cup milk

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp garlic powder (optional)

For the Glaze:

  • 1/3 cup ketchup

  • 2 tbsp brown sugar

  • 1 tbsp yellow mustard


🔪 Instructions:

1. Preheat Oven

  • Preheat your oven to 375°F (190°C).

2. Mix the Meatloaf

  • In a large bowl, combine all the meatloaf ingredients: ground beef, breadcrumbs, egg, chopped onion (and bell pepper, if using), milk, salt, pepper, and garlic powder.

  • Mix gently by hand or with a spoon until just combined — don’t overmix, or it can get tough.

3. Shape the Loaf

  • Place mixture into a loaf pan (or shape into a loaf by hand and place on a baking sheet lined with parchment paper or foil).

4. Mix the Glaze

  • In a small bowl, stir together ketchup, brown sugar, and mustard until smooth.

5. Top and Bake

  • Spread the glaze evenly over the top of the meatloaf.

  • Bake for 55–65 minutes, or until internal temperature reaches 160°F (71°C).

6. Rest & Serve

  • Let rest for 5–10 minutes before slicing to allow juices to redistribute.

  • Serve with mashed potatoes, green beans, or mac and cheese.

  • Double the recipe for a larger family — just increase bake time and use a larger pan.

  • Add Worcestershire sauce (1 tbsp) for more depth.
