🍽️ Paula Deen’s Meatloaf
✨ Description:
This is a simple, old-fashioned meatloaf recipe made with ground beef, breadcrumbs, and seasonings — baked to perfection and glazed with a ketchup-brown sugar-mustard topping.
📝 Ingredients:
For the Meatloaf:
-
1 lb ground beef (preferably 80/20)
-
1 cup breadcrumbs (plain or Italian)
-
1 egg, beaten
-
1 medium onion, finely chopped
-
1/4 cup chopped green bell pepper (optional)
-
1/4 cup milk
-
1 tsp salt
-
1/2 tsp black pepper
-
1 tsp garlic powder (optional)
For the Glaze:
-
1/3 cup ketchup
-
2 tbsp brown sugar
-
1 tbsp yellow mustard
🔪 Instructions:
1. Preheat Oven
-
Preheat your oven to 375°F (190°C).
2. Mix the Meatloaf
-
In a large bowl, combine all the meatloaf ingredients: ground beef, breadcrumbs, egg, chopped onion (and bell pepper, if using), milk, salt, pepper, and garlic powder.
-
Mix gently by hand or with a spoon until just combined — don’t overmix, or it can get tough.
3. Shape the Loaf
-
Place mixture into a loaf pan (or shape into a loaf by hand and place on a baking sheet lined with parchment paper or foil).
4. Mix the Glaze
-
In a small bowl, stir together ketchup, brown sugar, and mustard until smooth.
5. Top and Bake
-
Spread the glaze evenly over the top of the meatloaf.
-
Bake for 55–65 minutes, or until internal temperature reaches 160°F (71°C).
6. Rest & Serve
-
Let rest for 5–10 minutes before slicing to allow juices to redistribute.
-
Serve with mashed potatoes, green beans, or mac and cheese.
🍽️ Tips & Variations:
-
Double the recipe for a larger family — just increase bake time and use a larger pan.
-
Add Worcestershire sauce (1 tbsp) for more depth.
-
Use a mix of beef and pork for extra richness.
-
Want it spicier? Add a pinch of cayenne or a squirt of hot sauce to the glaze.
