🥘 Amish Hearty Beef and Veggie Casserole
Ingredients:

1 pound ground beef

1 onion, chopped

2 cloves garlic, minced

1 cup carrots, sliced

1 cup green beans, trimmed and cut into 1-inch pieces

1 cup corn kernels (fresh or frozen)

1 can (14.5 oz) diced tomatoes, undrained

1 cup beef broth

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon dried thyme

1 cup shredded cheddar cheese

2 cups cooked egg noodles
Instructions:

Preheat your oven to 350°F (175°C).

In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.

Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent.

Stir in the carrots, green beans, and corn, cooking for about 5 minutes until they begin to soften.

Add the diced tomatoes, beef broth, salt, pepper, and thyme. Bring to a simmer and let cook for 10 minutes.

Stir in the cooked egg noodles and half of the shredded cheddar cheese.

Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle the remaining cheese on top.
