Bacon Cheeseburger Meatloaf is everything you love about a classic cheeseburger — beef, bacon, cheddar, onions, pickles, and even a hint of ketchup — all baked into a hearty, juicy meatloaf. It’s comfort food with a burger-loving twist!


🥓🧀🍔 Bacon Cheeseburger Meatloaf


🧾 Ingredients (Serves 6–8)

  • 2 lbs ground beef (80/20 works great)

  • 1 cup shredded cheddar cheese

  • ½ cup diced onion

  • ½ cup dill pickles, chopped (optional but adds a great burger tang)

  • ½ cup breadcrumbs (or crushed buttery crackers)

  • 2 large eggs

  • ⅓ cup ketchup

  • 1 tbsp mustard

  • 1 tbsp Worcestershire sauce

  • 1 tsp garlic powder

  • ½ tsp salt

  • ½ tsp black pepper

  • 6–8 slices bacon, uncooked


🔪 Instructions

1️⃣ Preheat Oven

  • Preheat to 375°F (190°C).

  • Line a baking sheet with parchment or foil, or use a loaf pan.

2️⃣ Make the Meatloaf Mixture

In a large bowl, combine:

  • Ground beef

  • Shredded cheese

  • Onion, pickles, breadcrumbs

  • Eggs, ketchup, mustard, Worcestershire

  • Garlic powder, salt, and pepper
    Mix gently with hands or a spatula — don’t overwork it.

3️⃣ Shape and Top with Bacon

  • Form into a loaf shape on the prepared pan or press into a loaf pan.

  • Drape bacon slices over the top, slightly overlapping. Tuck ends under the loaf if needed.

4️⃣ Bake

  • Bake for 50–60 minutes, or until internal temp reaches 160°F (71°C).

  • For extra crispy bacon, broil for 2–4 minutes at the end (watch closely!).

5️⃣ Rest and Slice

  • Let meatloaf rest for 10 minutes before slicing — this keeps it juicy.


🍟 Optional Toppings & Sauce Ideas

  • Burger Sauce Glaze: Mix 2 tbsp ketchup + 1 tbsp mustard + 1 tsp brown sugar and brush over bacon halfway through baking.

  • Serve with extra pickles, chopped tomatoes, or even a drizzle of special sauce.

  • Great with mashed potatoes, fries, or a side salad.

  • Swap cheddar for pepper jack, smoked gouda, or a cheese blend.

  • Use a mix of beef and pork for added moisture.
