🧾 Ingredients (Serves 6–8)

2 lbs ground beef (80/20 works great)

1 cup shredded cheddar cheese

½ cup dill pickles, chopped (optional but adds a great burger tang)

½ cup breadcrumbs (or crushed buttery crackers)

⅓ cup ketchup

1 tbsp mustard

1 tbsp Worcestershire sauce

1 tsp garlic powder

6–8 slices bacon, uncooked
🔪 Instructions
1️⃣ Preheat Oven

Preheat to 375°F (190°C).

Line a baking sheet with parchment or foil, or use a loaf pan.
2️⃣ Make the Meatloaf Mixture
In a large bowl, combine:

Shredded cheese

Onion, pickles, breadcrumbs

Eggs, ketchup, mustard, Worcestershire

Garlic powder, salt, and pepper
Mix gently with hands or a spatula — don’t overwork it.
3️⃣ Shape and Top with Bacon

Form into a loaf shape on the prepared pan or press into a loaf pan.

Drape bacon slices over the top, slightly overlapping. Tuck ends under the loaf if needed.
4️⃣ Bake

Bake for 50–60 minutes, or until internal temp reaches 160°F (71°C).

For extra crispy bacon, broil for 2–4 minutes at the end (watch closely!).
5️⃣ Rest and Slice

Let meatloaf rest for 10 minutes before slicing — this keeps it juicy.
