Baked Cottage Cheese Eggs

4 large eggs

½ cup cottage cheese

¼ cup shredded cheese (cheddar, mozzarella, or your choice)

Salt and pepper, to taste

Optional: chopped herbs (chives, parsley, or dill)

Optional: sautéed vegetables (spinach, mushrooms, bell peppers)
Instructions
1. Preheat Oven

Preheat oven to 375°F (190°C).

Grease a small baking dish or use individual ramekins.
2. Prepare the Mixture

In a bowl, whisk together eggs, cottage cheese, shredded cheese, salt, and pepper.

Add optional herbs or vegetables if desired.
3. Pour & Bake

Pour the egg mixture into the prepared dish.

Bake 20–25 minutes, until eggs are set and slightly golden on top.
4. Serve
