🍖 BBQ Meatloaf with Roasted Potatoes

Ingredients

For the Meatloaf

  • 1½ lb (700 g) ground beef
  • 1 cup breadcrumbs
  • 1 egg
  • ½ cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ cup BBQ sauce (plus extra for topping)
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper

For the Roasted Potatoes

  • 1½ lb baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the meatloaf mixture
    In a large bowl combine:

    • Ground beef
    • Breadcrumbs
    • Egg
    • Milk
    • Onion and garlic
    • BBQ sauce
    • Worcestershire sauce
    • Paprika, salt, and pepper

    Mix until just combined.

  3. Shape the meatloaf
    Place the mixture in the center of a baking dish and form it into a loaf shape.
  4. Prepare the potatoes
    In a bowl toss the halved potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  5. Arrange around the meatloaf
    Spread the seasoned potatoes around the meatloaf in the baking dish.
  6. Bake
    Bake for 35 minutes, then brush the top of the meatloaf with extra BBQ sauce.
  7. Finish baking
    Return to the oven for 15–20 more minutes, until the meatloaf is cooked through and potatoes are golden.

Serving Tip

Let the meatloaf rest for 5 minutes before slicing so it stays juicy. Garnish with fresh parsley if desired.
