🥩 Beef and Gravy Over Mashed Potatoes
Perfect for weeknights or cozy weekends, this dish uses slow-simmered or pan-seared beef in homemade gravy, served over buttery mashed potatoes for a complete, soul-warming meal.
🧾 Ingredients (Serves 4–6)
🥩 For the Beef & Gravy:

1½ to 2 lbs beef stew meat, chuck roast, or sirloin tips, cut into chunks

Salt & black pepper

2 tbsp oil (vegetable or olive)

1 small onion, finely chopped

2 cloves garlic, minced
-
2 tbsp all-purpose flour

2½ cups beef broth (low sodium)

1 tbsp Worcestershire sauce

½ tsp thyme (dried or fresh)

Optional: ½ tsp paprika or a splash of soy sauce for depth
🥔 For the Mashed Potatoes:

2½ lbs russet or Yukon gold potatoes, peeled and cubed

½ cup milk or cream
-
¼ cup butter
-
Salt & pepper to taste
🔪 Instructions
1. Brown the Beef

Pat beef dry and season with salt and pepper.

In a large skillet or Dutch oven, heat oil over medium-high.

Sear beef in batches until browned on all sides (don’t overcrowd). Remove and set aside.
2. Make the Gravy Base

In the same pan, reduce heat and add onions. Sauté until soft (3–5 minutes).

Add garlic; cook 1 minute.

Sprinkle in flour and stir well to coat the onions, forming a roux. Cook for 1–2 minutes to remove raw flour taste.
3. Simmer the Gravy

Slowly whisk in beef broth to avoid lumps.

Add Worcestershire sauce, thyme, and paprika or soy sauce if using.

Return beef to the pan. Cover and simmer on low for 1 to 1½ hours, or until beef is tender and the gravy is rich.

4. Make the Mashed Potatoes

Boil potatoes in salted water until fork-tender (15–20 minutes).
