Instructions

Brown the beef:
Heat oil in a large skillet or saucepan over medium heat.
Add ground beef, breaking it up as it cooks, until browned.
Drain excess grease if needed. -
Sauté aromatics:
Add chopped onion and garlic. Cook for 2–3 minutes, until fragrant and softened. -
Add potatoes and seasonings:
Stir in diced potatoes, cumin, chili powder, paprika, salt, and pepper.
Mix well so potatoes are coated with flavor. -
Add tomatoes and broth:
Stir in diced tomatoes, tomato sauce, and broth (or water).
Bring to a boil, then reduce heat to low, cover, and simmer 20–25 minutes, stirring occasionally, until potatoes are tender and the sauce thickens. -

Taste and adjust seasoning — add salt, pepper, or a bit more broth if too thick.
