Carrot Apple Slaw

Ingredients

  • 2 large carrots, peeled and grated

  • 1 large apple, cored and grated (choose a sweet-tart variety like Fuji or Honeycrisp)

  • 2 tablespoons mayonnaise or Greek yogurt

  • 1 tablespoon lemon juice

  • 1 teaspoon honey or maple syrup (optional)

  • Salt and pepper, to taste

  • Optional: 2 tablespoons chopped fresh parsley or mint for garnish


Instructions

  1. Grate the carrots and apple into a medium bowl.

  2. Add the dressing: Mix mayonnaise (or Greek yogurt), lemon juice, honey, salt, and pepper in a small bowl.

  3. Combine: Pour the dressing over the grated carrots and apple. Toss until evenly coated.

  4. Garnish: Sprinkle with fresh herbs if desired.

  5. Chill and Serve: Refrigerate for 15–30 minutes to allow flavors to meld. Serve cold.


Tips

  • For extra crunch, add chopped walnuts or sunflower seeds.

  • Adjust sweetness with more or less honey depending on the apple variety.

  • Works great as a side for grilled meats, sandwiches, or as a refreshing salad on its own.
