Carrot Apple Slaw
Ingredients
-
2 large carrots, peeled and grated
-
1 large apple, cored and grated (choose a sweet-tart variety like Fuji or Honeycrisp)
-
2 tablespoons mayonnaise or Greek yogurt
-
1 tablespoon lemon juice
-
1 teaspoon honey or maple syrup (optional)
-
Salt and pepper, to taste
-
Optional: 2 tablespoons chopped fresh parsley or mint for garnish
Instructions
-
Grate the carrots and apple into a medium bowl.
-
Add the dressing: Mix mayonnaise (or Greek yogurt), lemon juice, honey, salt, and pepper in a small bowl.
-
Combine: Pour the dressing over the grated carrots and apple. Toss until evenly coated.
-
Garnish: Sprinkle with fresh herbs if desired.
-
Chill and Serve: Refrigerate for 15–30 minutes to allow flavors to meld. Serve cold.
Tips
-
For extra crunch, add chopped walnuts or sunflower seeds.
-
Adjust sweetness with more or less honey depending on the apple variety.
-
Works great as a side for grilled meats, sandwiches, or as a refreshing salad on its own.
If you want, I can also make:
-
A low-calorie version with yogurt only
-
A spicy version with chili or mustard
-
A meal-prep-friendly batch that lasts 3–4 days in the fridge
