Chicken and Potato Bake

Ingredients:

4 bone-in or boneless chicken thighs or breasts

4 medium potatoes, peeled and cut into 1-inch chunks

1 medium onion, sliced (optional)

3 tablespoons olive oil

1 teaspoon salt
-
1/2 teaspoon black pepper
-
1 teaspoon garlic powder
-
1 teaspoon paprika
-
1/2 teaspoon dried thyme (or rosemary)

1/2 teaspoon onion powder

Optional: 1/2 cup grated cheese for topping (cheddar, mozzarella, or a blend)
Instructions:
1. Preheat Oven

Preheat your oven to 400°F (200°C).
2. Prepare Potatoes

In a large bowl, toss the potato chunks with 2 tablespoons of olive oil, half the salt, pepper, garlic powder, paprika, thyme, and onion powder.

Spread the seasoned potatoes evenly in a greased 9×13-inch baking dish.
3. Season Chicken

Rub the remaining tablespoon of olive oil and seasoning mixture over the chicken pieces.
4. Assemble

Place the seasoned chicken on top of the potatoes in the baking dish.

If using onions, scatter them over the top or around the edges.
5. Bake

Cover the dish with foil and bake for 35 minutes.

Remove foil and bake uncovered for an additional 20–25 minutes, or until chicken is fully cooked (internal temp 165°F / 74°C) and potatoes are tender.

Optional: Add grated cheese on top during the last 5 minutes of baking and broil briefly to brown.
6. Serve

Let rest for 5 minutes before serving. Serve warm as a complete one-pan meal.
