⭐ Ingredients

For the Chicken-Fried Steak

  • 4 cube steaks (or tenderized round steaks)

  • 1 ½ cups all-purpose flour

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp black pepper

  • 1 tsp salt

  • ½ tsp cayenne (optional for heat)

  • 2 large eggs

  • ¾ cup buttermilk

  • 2 lbs russet or Yukon gold potatoes

  • ½ cup warm milk or cream

  • 3 tbsp pan drippings

  • 3 tbsp flour

  • 2 cups whole milk

🍳 Instructions

1. Prepare the Mashed Potatoes

  1. Peel and cut potatoes into chunks.

  2. Boil in salted water until fork-tender (15–20 min).

  3. Drain, then mash with butter, milk, salt, and pepper.

  4. Keep warm.


2. Set Up the Breading Station

Dry Mix:

Combine flour, paprika, garlic powder, onion powder, pepper, salt, and cayenne.

Wet Mix:

Whisk together eggs, buttermilk, and hot sauce.


3. Bread the Steaks

  1. Pat steaks dry.

  2. Dredge in seasoned flour.

  3. Dip into the egg–buttermilk mixture.

  4. Dredge again in flour, pressing to coat well.
    (Double-dipping gives that signature thick, crunchy crust.)


4. Fry to Crispy Perfection

  1. Heat ¼ inch of oil in a large skillet over medium-high heat (around 350°F).

  2. Add steaks and fry 3–4 minutes per side, until golden and crisp.

5. Make the Country Gravy

  1. Pour off excess oil, leaving 3 tbsp drippings in the pan.

  2. Whisk in 3 tbsp flour to form a roux; cook 1–2 min.

  3. Slowly add milk, whisking until smooth.

  4. Simmer until thickened. Season generously with salt & pepper.
