🥥 Coconut Chewies Recipe

Makes: 16 bars (in an 8×8 or 9×9 pan)
🍴 Ingredients:

½ cup (1 stick / 113g) unsalted butter, melted

1 cup light brown sugar, packed

1 large egg
-
1 tsp vanilla extract
-
1 cup all-purpose flour
-
¼ tsp salt
-
1½ cups sweetened shredded coconut
🔪 Instructions:

Preheat oven to 350°F (175°C).
Line an 8×8 or 9×9-inch baking pan with parchment or lightly grease. -
Mix wet ingredients:
In a mixing bowl, stir together melted butter and brown sugar until smooth.
Add egg and vanilla; mix until combined. -
Add dry ingredients:
Stir in flour and salt just until no streaks remain.
Fold in shredded coconut. -
Spread & bake:
Spread the thick batter evenly into your prepared pan.
Bake for 25–30 minutes, or until the top is golden and set, and edges are lightly browned. -
Cool & cut:
Let cool completely before slicing into squares or bars. (They firm up as they cool.)
🍫 Optional Add-Ins:

½ cup white or dark chocolate chips

¼ cup chopped macadamia nuts or pecans

A few pinches of flaky sea salt on top before baking

Store at room temp in an airtight container for up to 4 days.
