Here’s a simple, sweet, and chewy treat that’s full of coconut flavor — Coconut Chewies! These golden bars are buttery, soft in the center, and slightly crisp on the edges. Think of them like coconut blondies: rich, chewy, and irresistible.


🥥 Coconut Chewies Recipe

🕒 Prep Time: 10 min | Bake Time: 25–30 min

Makes: 16 bars (in an 8×8 or 9×9 pan)


🍴 Ingredients:

  • ½ cup (1 stick / 113g) unsalted butter, melted

  • 1 cup light brown sugar, packed

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 cup all-purpose flour

  • ¼ tsp salt

  • 1½ cups sweetened shredded coconut


🔪 Instructions:

  1. Preheat oven to 350°F (175°C).
    Line an 8×8 or 9×9-inch baking pan with parchment or lightly grease.

  2. Mix wet ingredients:
    In a mixing bowl, stir together melted butter and brown sugar until smooth.
    Add egg and vanilla; mix until combined.

  3. Add dry ingredients:
    Stir in flour and salt just until no streaks remain.
    Fold in shredded coconut.

  4. Spread & bake:
    Spread the thick batter evenly into your prepared pan.
    Bake for 25–30 minutes, or until the top is golden and set, and edges are lightly browned.

  5. Cool & cut:
    Let cool completely before slicing into squares or bars. (They firm up as they cool.)


🍫 Optional Add-Ins:

  • ½ cup white or dark chocolate chips

  • ¼ cup chopped macadamia nuts or pecans

  • A few pinches of flaky sea salt on top before baking


🥶 Storage:

  • Store at room temp in an airtight container for up to 4 days.

  • They freeze beautifully — just wrap individually and freeze for up to 2 months.
