Ingredients

For the Crawfish Fries:

  • 1 cup cooked crawfish tails (fresh or thawed if frozen)

  • 1 garlic clove, minced

  • 1 tsp Cajun or Creole seasoning

  • Salt and pepper, to taste

  • 2 tbsp chopped green onions (optional)

  • 1 tbsp chopped fresh parsley (optional)

For the Creamy Queso Sauce:

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 1 cup whole milk (or half-and-half for richer sauce)

  • 1½ cups shredded cheese (cheddar, Monterey Jack, or a blend)

  • ¼ tsp garlic powder

  • ¼ tsp onion powder

  • Salt and pepper, to taste

  • ½ tsp hot sauce (optional)


Instructions

1. Prepare the Fries:

  • Cook fries according to package instructions until crispy. If using fresh fries, bake or fry until golden and crispy.

  • Keep warm.

2. Cook the Crawfish:

  • In a skillet, melt butter over medium heat.

  • Add chopped onion and garlic; sauté until translucent and fragrant, about 3 minutes.

  • Add crawfish tails and Cajun seasoning.

  • Cook for 3–4 minutes, stirring occasionally.

  • Season with salt and pepper. Remove from heat and set aside.

3. Make the Queso Sauce:

  • In a saucepan, melt butter over medium heat.

  • Whisk in flour and cook for 1–2 minutes to form a roux (paste), stirring constantly.

  • Gradually whisk in milk and bring to a simmer.

  • Continue whisking until sauce thickens, about 3–5 minutes.

  • Remove from heat and stir in shredded cheese, garlic powder, onion powder, salt, pepper, and hot sauce (if using). Stir until smooth.

4. Assemble:

  • Place fries on a serving platter or individual plates.

  • Spoon cooked crawfish evenly over fries.

  • Drizzle creamy queso sauce generously on top.

  • Garnish with chopped green onions and parsley if desired.

5. Serve:

  • Serve immediately while warm.
