Crawfish Fries with Creamy Queso Sauce

Ingredients
For the Crawfish Fries:

4 cups frozen French fries (or fresh-cut fries)

1 cup cooked crawfish tails (fresh or thawed if frozen)

1 tbsp butter

1 small onion, finely chopped

1 garlic clove, minced

1 tsp Cajun or Creole seasoning

Salt and pepper, to taste

2 tbsp chopped green onions (optional)

1 tbsp chopped fresh parsley (optional)
For the Creamy Queso Sauce:

2 tbsp butter
-
2 tbsp all-purpose flour
-
1 cup whole milk (or half-and-half for richer sauce)

1½ cups shredded cheese (cheddar, Monterey Jack, or a blend)

¼ tsp garlic powder
-
¼ tsp onion powder
-
Salt and pepper, to taste

½ tsp hot sauce (optional)
Instructions
1. Prepare the Fries:

Cook fries according to package instructions until crispy. If using fresh fries, bake or fry until golden and crispy.

Keep warm.
2. Cook the Crawfish:

In a skillet, melt butter over medium heat.

Add chopped onion and garlic; sauté until translucent and fragrant, about 3 minutes.

Add crawfish tails and Cajun seasoning.

Cook for 3–4 minutes, stirring occasionally.

Season with salt and pepper. Remove from heat and set aside.
3. Make the Queso Sauce:

In a saucepan, melt butter over medium heat.

Whisk in flour and cook for 1–2 minutes to form a roux (paste), stirring constantly.

Gradually whisk in milk and bring to a simmer.

Continue whisking until sauce thickens, about 3–5 minutes.

Remove from heat and stir in shredded cheese, garlic powder, onion powder, salt, pepper, and hot sauce (if using). Stir until smooth.
4. Assemble:

Place fries on a serving platter or individual plates.

Spoon cooked crawfish evenly over fries.

Drizzle creamy queso sauce generously on top.

Garnish with chopped green onions and parsley if desired.
