Cream Cheese and Bacon Stuffed Doritos Bites

Ingredients

  • 8 oz cream cheese, softened

  • 1 cup shredded cheddar cheese (or pepper jack for spice)

  • 4 slices cooked bacon, finely chopped

  • 1 green onion, finely chopped (optional)

  • 2 cups crushed Doritos (any flavor, like Nacho Cheese or Spicy Sweet Chili)

  • ½ cup all-purpose flour

  • 2 eggs, beaten

  • Oil for frying (vegetable or canola)


Instructions

1. Make the Filling:

  • In a medium bowl, mix together cream cheese, cheddar cheese, bacon, and green onion until smooth and combined.

  • Scoop about 1 tablespoon of the mixture and roll it into a ball. Repeat until all filling is used.

2. Chill:

  • Place the cheese balls on a parchment-lined tray.

  • Freeze or refrigerate for 30 minutes — this helps them hold their shape during coating and frying.

3. Prepare the Coating:

  • Place flour in one bowl, beaten eggs in another, and crushed Doritos in a third.

  • Roll each chilled ball in flour, then dip in egg, and finally roll in crushed Doritos until well coated.

  • Press gently so the coating sticks firmly.

4. Fry:

  • Heat about 1 inch of oil in a deep skillet or pot to 350°F (175°C).

  • Fry in batches for 1–2 minutes per side, until golden and crisp.

  • Remove and drain on paper towels.

5. Serve:

  • Serve warm as-is, or with dipping sauces like ranch, chipotle mayo, or spicy queso.


Tips

  • Air fryer option: Spray coated bites lightly with oil and air fry at 375°F (190°C) for 6–8 minutes, until crispy.

  • Use Flamin’ Hot Doritos or Cool Ranch for different flavor profiles.

  • Add finely diced jalapeños to the filling for extra heat.
