🍗 Creamy Garlic Chicken with Roasted Baby Potatoes

🧂 Ingredients:

For the Roasted Baby Potatoes:

  • 1½ lbs baby potatoes, halved

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • ½ tsp paprika (optional)

  • Salt & pepper, to taste

  • Fresh rosemary or thyme (optional)

For the Chicken:

  • 4 boneless, skinless chicken breasts or thighs

  • Salt & pepper, to taste

  • 1 tsp Italian seasoning

  • 1 tbsp olive oil

  • 1 tbsp butter

For the Creamy Garlic Sauce:

  • 4–5 cloves garlic, minced

  • 1 cup chicken broth

  • ¾ cup heavy cream

  • ½ cup grated Parmesan cheese

  • 1 tsp Dijon mustard (optional, adds depth)

  • Salt & black pepper, to taste

  • 1 tbsp chopped parsley (for garnish)


🔪 Instructions:

🔥 Step 1: Roast the Baby Potatoes

  1. Preheat oven to 425°F (220°C).

  2. Toss halved baby potatoes with olive oil, garlic powder, paprika, salt, pepper, and herbs (if using).

  3. Spread on a baking sheet in a single layer, cut side down.

  4. Roast for 25–30 minutes, flipping halfway, until golden and crispy.


🍳 Step 2: Cook the Chicken

  1. While potatoes roast, season chicken with salt, pepper, and Italian seasoning.

  2. Heat olive oil and butter in a large skillet over medium-high heat.

  3. Sear chicken for 5–7 minutes per side (depending on thickness) until golden and cooked through (165°F internal temp).

  4. Remove chicken and set aside (keep warm).


🥄 Step 3: Make the Creamy Garlic Sauce

  1. In the same pan, reduce heat to medium. Add a bit more butter if needed.

  2. Sauté minced garlic for about 1 minute (don’t let it brown).

  3. Pour in chicken broth to deglaze the pan, scraping up browned bits.

  4. Stir in cream, Dijon mustard (if using), and Parmesan cheese.

  5. Simmer gently for 3–5 minutes until slightly thickened. Season with salt and pepper to taste.


🍽️ Step 4: Finish & Serve

  • Return chicken to the pan and spoon sauce over the top.

  • Serve alongside roasted baby potatoes.

  • Garnish with chopped parsley and extra Parmesan, if desired.


📝 Tips & Variations:

  • Add spinach or mushrooms to the sauce for extra veg.

  • Sub heavy cream with half-and-half (though sauce will be slightly thinner).

  • Want more garlic punch? Roast a whole head of garlic and mash it into the sauce.
