1 tsp garlic powder
-
½ tsp paprika (optional)
-
Salt & pepper, to taste
-
Fresh rosemary or thyme (optional)
For the Chicken:

4 boneless, skinless chicken breasts or thighs

Salt & pepper, to taste

1 tbsp butter
For the Creamy Garlic Sauce:

4–5 cloves garlic, minced
-
1 cup chicken broth
-
¾ cup heavy cream
-
½ cup grated Parmesan cheese
-
1 tsp Dijon mustard (optional, adds depth)
-
Salt & black pepper, to taste
-
1 tbsp chopped parsley (for garnish)
🔪 Instructions:
🔥 Step 1: Roast the Baby Potatoes
-
Preheat oven to 425°F (220°C).
-
Toss halved baby potatoes with olive oil, garlic powder, paprika, salt, pepper, and herbs (if using).
-
Spread on a baking sheet in a single layer, cut side down.
-
Roast for 25–30 minutes, flipping halfway, until golden and crispy.
🍳 Step 2: Cook the Chicken
-
While potatoes roast, season chicken with salt, pepper, and Italian seasoning.
-
Heat olive oil and butter in a large skillet over medium-high heat.
-
Sear chicken for 5–7 minutes per side (depending on thickness) until golden and cooked through (165°F internal temp).
-
Remove chicken and set aside (keep warm).
🥄 Step 3: Make the Creamy Garlic Sauce
-
In the same pan, reduce heat to medium. Add a bit more butter if needed.
-
Sauté minced garlic for about 1 minute (don’t let it brown).
-
Pour in chicken broth to deglaze the pan, scraping up browned bits.
-
Stir in cream, Dijon mustard (if using), and Parmesan cheese.
-
Simmer gently for 3–5 minutes until slightly thickened. Season with salt and pepper to taste.
🍽️ Step 4: Finish & Serve
-
Return chicken to the pan and spoon sauce over the top.
-
Serve alongside roasted baby potatoes.
-
Garnish with chopped parsley and extra Parmesan, if desired.
📝 Tips & Variations:
-
Add spinach or mushrooms to the sauce for extra veg.
-
Sub heavy cream with half-and-half (though sauce will be slightly thinner).
-
Want more garlic punch? Roast a whole head of garlic and mash it into the sauce.
Let me know if you’d like to make this a one-pan meal, add asparagus or green beans, or turn the sauce into a baked casserole version!
