For the Cake:

  • 1 cup all-purpose flour

  • 1 ½ tsp baking powder

  • ¼ tsp salt

  • 5 large eggs, separated

  • 1 cup sugar (divided: ¾ cup + ¼ cup)

  • ⅓ cup whole milk

  • 1 tsp vanilla extract

For the Milk Soak:

  • 1 (12 oz) can evaporated milk

  • 1 (14 oz) can sweetened condensed milk

  • ¾ cup heavy cream (or whole milk for a lighter option)

  • 1 tsp vanilla extract (optional)

For the Whipped Topping:

  • 1 ½ cups heavy whipping cream

  • 2–3 tbsp powdered sugar

  • 1 tsp vanilla extract


🔪 Instructions:

1. Make the Cake

  • Preheat oven to 350°F (175°C).

  • Grease and flour a 9×13-inch baking dish (or line with parchment).

  • In a bowl, whisk together flour, baking powder, salt. Set aside.

2. Whip the Egg Whites

  • In a clean bowl, beat egg whites until soft peaks form.

  • Slowly add ¼ cup sugar and beat until stiff peaks form.

3. Beat Yolks & Sugar

  • In a separate bowl, beat egg yolks with remaining ¾ cup sugar until pale and thick (about 2–3 mins).

  • Add milk and vanilla. Mix in dry ingredients.

4. Fold In Egg Whites

  • Gently fold egg whites into the yolk/flour batter using a spatula. Don’t overmix.

5. Bake

  • Pour batter into the pan and smooth the top.

  • Bake for 25–30 minutes, or until a toothpick comes out clean.

  • Let cool for 10 minutes.

6. Make the Milk Mixture

  • Whisk together evaporated milk, sweetened condensed milk, heavy cream, and vanilla.

7. Soak the Cake

  • Poke holes all over the slightly cooled cake with a fork or skewer.

  • Slowly pour the milk mixture over the entire surface.

  • Cover and refrigerate for at least 4 hours (overnight is best!).

8. Make the Whipped Topping

  • Beat cold heavy cream with powdered sugar and vanilla until soft peaks form.

  • Spread over the chilled cake.
