Ingredients

  • 1 can (20 oz / 565 g) crushed pineapple in juice, undrained

  • 1 package (3.4 oz / 96 g) instant vanilla pudding mix

  • 1 cup (240 ml) cold milk (whole or 2%)

  • 1 cup (240 ml) heavy cream, whipped (or 1 tub whipped topping)

  • 1/2 teaspoon vanilla extract (optional)

  • 1/2 cup sweetened shredded coconut (optional, for texture and flavor)

  • Optional garnish: toasted coconut, chopped nuts, or maraschino cherries


Instructions

1. Prepare the Base

  • In a medium mixing bowl, combine the crushed pineapple with its juice and the instant vanilla pudding mix.

  • Stir until the pudding mix is fully dissolved and the mixture thickens slightly (1–2 minutes).

2. Add Milk

  • Gradually whisk in the cold milk until smooth. Let sit for 5 minutes to thicken.

3. Fold in Cream

  • Gently fold in the whipped cream (or whipped topping) until fully combined and fluffy.

  • Add the vanilla extract and shredded coconut if using, and stir gently.

4. Chill

  • Spoon the mixture into a serving dish or individual cups.

  • Cover and refrigerate for at least 2 hours, or until fully chilled and set.


To Serve

  • Serve chilled, topped with toasted coconut, crushed graham crackers, or a cherry for presentation if desired.


Storage

  • Keep refrigerated in a covered container for up to 3 days.

  • Not recommended for freezing due to the dairy content.
