🍤 Crispy Honey Garlic Shrimp Skewers with Tangy Lime Dipping Sauce
🧂 Ingredients
For the Shrimp Skewers:

1½ lbs (680g) large shrimp, peeled and deveined (tails on or off)

2 tbsp soy sauce

1 tbsp honey

3 cloves garlic, minced

1 tsp fresh grated ginger

½ tsp chili flakes (optional)

Salt & pepper to taste

½ cup cornstarch (for coating)

2 tbsp neutral oil (vegetable, canola, etc.)

Bamboo or metal skewers
For the Tangy Lime Dipping Sauce:

¼ cup mayonnaise

1 tbsp fresh lime juice
-
1 tsp lime zest
-
1 tsp honey or agave
-
½ tsp sriracha (optional, for a kick)

Pinch of salt
🔪 Instructions
1. Prep the Shrimp:

In a bowl, combine shrimp with soy sauce, honey, garlic, ginger, chili flakes, salt, and pepper.

Marinate for at least 20–30 minutes (or up to 2 hours in the fridge).
2. Skewer and Coat:

If using bamboo skewers, soak them in water for 30 minutes.

Thread 3–4 shrimp per skewer.

Lightly dust shrimp in cornstarch just before cooking. Shake off excess.
3. Sear or Grill:

Stovetop Method: Heat 2 tbsp oil in a large skillet over medium-high heat. Cook skewers 2–3 minutes per side until golden and crispy.

Grill Method: Brush grill with oil. Grill skewers over medium-high heat for 2–3 minutes per side, brushing with extra marinade in the first minute (discard leftover marinade afterward).
4. Make the Dipping Sauce:

In a small bowl, whisk together mayo, lime juice, lime zest, honey, sriracha, and a pinch of salt.

Chill until ready to serve.
