Slow Cooker Cabbage Meal

Ingredients

  • 1 medium head of cabbage, chopped into wedges or bite-sized pieces
  • 1–2 lbs meat (pork shoulder, chicken thighs, or beef stew meat)
  • 1 large onion, sliced
  • 2–3 cloves garlic, minced
  • 2–3 carrots, chopped
  • 2–3 potatoes, diced
  • 1 can (14 oz) diced tomatoes
  • 1 cup broth (chicken, beef, or vegetable)
  • 1–2 tsp paprika (smoked or sweet)
  • 1 tsp black pepper
  • 1 tsp salt (adjust to taste)
  • Optional: 1 tsp dried thyme or caraway seeds for extra flavor

Instructions

  1. Prepare the Slow Cooker
    • Spray with nonstick cooking spray or lightly oil the bottom.
  2. Layer Ingredients
    • Start with cabbage wedges at the bottom.
    • Add meat on top, then layer onion, garlic, carrots, and potatoes.
    • Pour in diced tomatoes and broth, then sprinkle spices over the top.
  3. Cook
    • Cover and cook on LOW for 6–8 hours or HIGH for 4–5 hours until meat is tender and cabbage is soft.
  4. Finish and Serve
    • Taste and adjust seasoning.
    • For a touch of brightness, add a splash of apple cider vinegar before serving.
    • Serve in bowls with fresh bread or over rice or mashed potatoes.
