Flourless Cloud Cake

Light, airy, and incredibly simple, this flourless cloud cake is a perfect dessert when you want something soft, delicate, and naturally gluten-free. With just a few ingredients, it creates a fluffy, melt-in-your-mouth texture that feels almost like a sweet cloud.


Ingredients

  • 3 large eggs (separated)
  • 3 tablespoons sugar (or a natural sweetener)
  • 1 tablespoon cornstarch (optional, for structure)
  • ½ teaspoon vanilla extract
  • A pinch of salt

Instructions

1. Prepare the Eggs

  • Separate the egg whites and yolks into two bowls.
  • Make sure no yolk gets into the whites.

2. Whip the Egg Whites

  • Add a pinch of salt to the whites.
  • Beat until soft peaks form.
  • Gradually add sugar and continue beating until stiff, glossy peaks form.

3. Mix the Yolks

  • In the other bowl, whisk egg yolks with vanilla and cornstarch until smooth.

4. Fold Gently

  • Carefully fold the yolk mixture into the whipped egg whites.
  • Do this slowly to keep the air in the batter.

5. Bake

  • Preheat oven to 160°C (320°F).
  • Line a small baking pan with parchment paper.
  • Pour in the batter and smooth the top.
  • Bake for 25–30 minutes until lightly golden.

6. Cool and Serve

  • Let the cake cool before removing from the pan.
  • It may deflate slightly—that’s normal.

Tips for Best Results

  • Do not overmix after folding—this keeps the cake airy
  • Use room temperature eggs for better volume
  • Serve with fresh fruit, yogurt, or a light dusting of powdered sugar
