Garbage Bread is a fun, customizable, and totally satisfying stuffed bread — kind of like a stromboli meets a hot pocket, loaded with meats, cheese, and whatever else you have on hand (hence the name!). It’s great for parties, game day, or using up leftovers in a delicious way.


🧀 Garbage Bread (Stuffed Bread Roll)

🍽 Ingredients:

This is a classic version, but you can mix and match based on what’s in your fridge.

  • 1 lb pizza dough (store-bought or homemade)

  • ½ lb ground beef or sausage, cooked and crumbled

  • 1 cup shredded mozzarella cheese

  • 1 cup shredded cheddar cheese

  • ½ cup pepperoni or salami, chopped

  • ½ small onion, diced (optional)

  • ½ cup pickles, banana peppers, or olives (optional)

  • ¼ cup pizza sauce or mustard (optional, based on your flavor profile)

  • 1 tsp Italian seasoning or garlic powder

  • 1 egg, beaten (for egg wash)

  • Flour, for rolling out dough


🔪 Instructions:

1. Preheat Oven:

  • Preheat to 375°F (190°C).

  • Line a baking sheet with parchment paper or lightly grease it.

2. Roll the Dough:

  • On a floured surface, roll out pizza dough into a large rectangle (about 10×14 inches).

3. Layer the Fillings:

  • Spread sauce or mustard (if using) over the dough, leaving a 1-inch border.

  • Layer cooked meat, cheese, onions, and any other fillings evenly across the surface.

  • Sprinkle with seasonings.

4. Roll It Up:

  • Starting from the long side, tightly roll up the dough like a jelly roll.

  • Pinch the seam and ends to seal.

  • Place seam-side down on the baking sheet.

5. Bake:

  • Brush the top with beaten egg for a golden crust.

  • Bake for 25–30 minutes, or until golden brown and cooked through.

  • Let rest for 5–10 minutes before slicing.

  • Cheesesteak Style: Sautéed steak, onions, peppers, provolone

  • Buffalo Chicken: Shredded chicken, buffalo sauce, cheddar, ranch or blue cheese

  • Italian: Salami, pepperoni, provolone, banana peppers, marinara

  • Taco Style: Ground beef, taco seasoning, cheddar, jalapeños, salsa

  • Breakfast: Scrambled eggs, bacon or sausage, cheese, hash browns


📝 Tips:

  • Use crescent roll dough or puff pastry for a flakier version.

  • Great for freezing: Bake, cool completely, wrap tightly, and freeze. Reheat in oven at 350°F until warmed through.

  • Can be made in advance and reheated for parties.
