Garlic Butter Beef Bites with Potatoes (Slow Cooker)
Ingredients (Serves 4)

1.5 lb (700 g) beef stew meat, cut into bite-sized pieces

1.5 lb (700 g) baby potatoes, halved or quartered

4 cloves garlic, minced

1 medium onion, chopped

1/2 cup beef broth

3 tbsp unsalted butter, cut into small pieces

1 tsp dried thyme or Italian seasoning

Salt and black pepper, to taste

2 tbsp fresh parsley, chopped (for garnish)
Instructions
1. Prepare Ingredients

Season beef bites with salt and pepper.

Toss potatoes with a little salt, pepper, and 1 tsp of the garlic.
2. Layer in Slow Cooker

Place potatoes at the bottom of the slow cooker.

Add beef bites on top of the potatoes.

Sprinkle remaining garlic and chopped onion over the beef.

Add thyme or Italian seasoning.

Pour beef broth over everything.
3. Cook

Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until beef is tender and potatoes are cooked through.
4. Add Garlic Butter

About 15 minutes before serving, dot butter over the beef and potatoes.

Stir gently to melt butter and coat ingredients in garlic flavor.
5. Serve

Garnish with fresh parsley and serve hot.
