🧀 Cheesy Smashed Potatoes

Perfectly seared steak bites dripping with garlic butter, paired with crispy, golden, cheesy smashed potatoes — it’s a hearty, indulgent meal that comes together quickly and makes you look like a kitchen rockstar. 🤘🍽️


🔥 Garlic Butter Steak Bites

📝 Ingredients:

  • 1½ lbs sirloin steak, ribeye, or NY strip, cut into 1-inch cubes

  • Salt & pepper, to taste

  • 1 tbsp olive oil

  • 3 tbsp unsalted butter

  • 4 cloves garlic, minced

  • 1 tsp fresh thyme or rosemary (or both!)

  • Optional: A squeeze of lemon juice or a pinch of red pepper flakes


🔪 Instructions:

  1. Prep the steak:
    Pat steak bites dry with paper towels (this helps sear). Season generously with salt and pepper.

  2. Sear in batches:
    Heat olive oil in a hot skillet (cast iron works best) over medium-high heat.
    Add half the steak cubes and sear 1–2 minutes per side until browned. Don’t overcrowd. Remove to plate and repeat with the rest.

  3. Garlic butter magic:
    Lower heat to medium. Add butter to the pan. Once melted, stir in garlic and herbs.
    Cook for 30 seconds — don’t burn the garlic!

  4. Toss and serve:
    Return steak to the pan, toss to coat in garlic butter for 1 minute.
    Serve hot, spooning garlic butter over the top.


🧄🧀 Cheesy Smashed Potatoes

📝 Ingredients:

  • 1½ lbs baby potatoes (Yukon gold or red work great)

  • 2 tbsp olive oil

  • 2 tbsp melted butter

  • 3 cloves garlic, minced

  • Salt & pepper, to taste

  • ½ tsp paprika or Italian seasoning (optional)

  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)

  • Optional garnish: chopped parsley or green onions


🔪 Instructions:

  1. Boil potatoes:
    Place potatoes in salted water, bring to a boil, and cook for 15–20 minutes until fork-tender. Drain.

  2. Smash ‘em:
    Place on a greased or parchment-lined baking sheet. Use a glass or potato masher to gently flatten each potato to about ½ inch thick.

  3. Flavor & bake:
    Mix olive oil, melted butter, and garlic. Brush mixture over each smashed potato.
    Sprinkle with salt, pepper, and seasoning.

  4. Roast:
    Bake at 425°F (220°C) for 20–25 minutes, until golden and crispy on the edges.

  5. Cheese time:
    Sprinkle shredded cheese over each potato and return to the oven for another 5 minutes, or until melted and bubbly.

Plate your steak bites alongside the crispy cheesy smashed potatoes and drizzle any leftover garlic butter from the pan over both. Serve with a simple green salad or roasted broccoli if you want to sneak in a veggie.
