Here’s how to make it happen from scratch:


🥞 Perfect Golden-Brown Pancakes

🍽️ Makes: 8–10 medium pancakes

⭐ Ingredients:

  • 1 ½ cups all-purpose flour

  • 3 ½ tsp baking powder

  • 1 tbsp granulated sugar

  • ½ tsp salt

  • 1 ¼ cups milk (room temperature)

  • 1 large egg

  • 3 tbsp melted butter (plus more for the pan)

  • 1 tsp vanilla extract (optional)


🔪 Instructions:

1. Preheat Your Pan

  • Heat a nonstick skillet or griddle over medium to medium-low heat.

  • Let it get hot for a couple minutes before adding batter — this helps create that golden crust.

2. Make the Batter

In a large bowl, whisk together:

  • Flour, baking powder, sugar, and salt.

In a separate bowl, whisk together:

  • Milk, egg, melted butter, and vanilla.

Pour wet into dry and stir just until combined — lumps are fine. Don’t overmix (overmixed batter = tough pancakes).

3. Grease the Pan

  • Lightly grease the pan with butter or oil — just enough to coat it.

  • Too much fat can fry the edges rather than give a uniform golden color.

4. Cook the Pancakes

  • Pour about ¼ cup of batter for each pancake.

  • Cook until bubbles form on the surface and the edges look set (2–3 minutes).

  • Flip once and cook another 1–2 minutes until the other side is golden-brown.

5. Serve Immediately

  • Stack ’em up and top with butter, maple syrup, berries, or anything you like.

  • Pan temperature is key: Too hot = burned outside, raw inside. Too cool = pale and rubbery. Medium is your sweet spot.

  • Let batter rest for 5–10 minutes before cooking to let the flour hydrate fully.

  • Use cast iron or a thick-bottomed nonstick pan for the best browning.
