🥒 Marinated Cucumber Salad Recipe

Ingredients (Serves 4)

  • 2 large cucumbers, thinly sliced
  • 1 small red onion, thinly sliced
  • 1/4 cup rice vinegar or apple cider vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon sugar or honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: fresh dill, parsley, or chives for garnish

Instructions

  1. Prepare the Vegetables
    • Slice cucumbers and onions thinly (a mandoline works well).
    • Place in a large bowl.
  2. Make the Marinade
    • Whisk together vinegar, olive oil, sugar, salt, and pepper.
  3. Combine
    • Pour the marinade over the cucumbers and onions.
    • Toss gently to coat all slices evenly.
  4. Marinate
    • Cover and refrigerate for at least 30 minutes (up to 2 hours) for best flavor.
  5. Serve
    • Garnish with fresh herbs if desired.
    • Enjoy chilled as a side dish or light snack.

💡 Tips

  • For extra crunch, sprinkle some sesame seeds on top before serving.
  • Can be made ahead of time—flavors improve after a few hours.
  • Use thinly sliced cucumbers to absorb the marinade faster.
