Mediterranean Spinach and Feta Crisps

Posted on October 11, 2025 by Admin
Mediterranean Spinach and Feta Crisps are a delightful, savory snack or appetizer — crispy golden pastry filled with a flavorful blend of spinach, feta cheese, herbs, and garlic. Think of them like mini spanakopita pockets, but easier and perfect for parties, lunches, or just snacking.

You can use phyllo dough, puff pastry, or even wonton wrappers, depending on the texture and time you’re after.

🫓 Mediterranean Spinach and Feta Crisps

🕒 Prep Time: 20 min | Cook Time: 15–20 min

Makes: ~18–24 crisps (depending on size)

🍴 Ingredients:

For the Filling:

  • 1 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 5 oz (about 5 cups) fresh spinach, chopped (or use 10 oz frozen, thawed & squeezed dry)

  • ½ tsp salt

  • ¼ tsp black pepper

  • ¼ tsp nutmeg (optional but traditional)

  • 1 tsp dried oregano or chopped fresh dill

  • ½ cup crumbled feta cheese

  • ¼ cup ricotta or cream cheese (for creaminess, optional)

  • 1 egg (lightly beaten, to help bind)

For Assembly:

  • 1 package phyllo dough or puff pastry, thawed

  • ¼ cup melted butter or olive oil (for brushing)

  • Optional: sesame seeds or nigella seeds for topping

🔪 Instructions:

1. Make the Filling:

  • Heat olive oil in a skillet over medium heat.

  • Sauté onion for 3–4 minutes until soft, then add garlic and cook 30 seconds.

  • Add spinach, season with salt, pepper, nutmeg, and oregano/dill. Cook until wilted (or warmed through if using frozen).

  • Let mixture cool slightly, then stir in feta, optional ricotta, and egg.

2. Assemble the Crisps:

If Using Phyllo Dough:

  • Preheat oven to 375°F (190°C).

  • Cut phyllo sheets into strips (about 3–4 inches wide).

  • Brush one strip with melted butter or oil, then place another strip on top.

  • Spoon 1 tbsp of filling at the end of the strip.

  • Fold into triangles, like folding a flag, encasing the filling.

  • Place on baking sheet, brush tops with more butter/oil, and sprinkle seeds if using.

If Using Puff Pastry:

  • Cut pastry into 3-inch squares.

  • Place 1 tbsp filling in center. Fold into a triangle or rectangle, seal edges with fork.

  • Brush with egg wash (1 egg + 1 tbsp water) for shine.

3. Bake:

  • Bake at 375°F for 15–20 minutes, or until golden brown and crisp.

🧊 Make-Ahead & Freezing:

  • Assemble but don’t bake, then freeze on a tray and transfer to a bag.

  • Bake from frozen, adding 3–5 extra minutes to baking time.

🍽️ Serving Suggestions:

  • Serve with tzatziki, hummus, or harissa yogurt dip

  • Great with a side salad for a light meal

Would you like a version using gluten-free dough, a vegan option, or something with added sun-dried tomatoes or olives for more Mediterranean flair?
