Here’s a classic Old-Fashioned Meatloaf recipe—moist, hearty, and topped with a rich, tangy glaze. Just like Grandma used to make!


🍽️ Old-Fashioned Meatloaf Recipe

Ingredients:

For the meatloaf:

  • 1 ½ lbs ground beef (80/20 for flavor and moisture)

  • 1 cup breadcrumbs (plain or Italian-style)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1/2 cup milk

  • 2 eggs

  • 2 tbsp Worcestershire sauce

  • 2 tbsp ketchup

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp dried thyme (optional)

  • 1 tbsp chopped parsley (optional)

For the glaze:

  • 1/3 cup ketchup

  • 2 tbsp brown sugar

  • 1 tbsp mustard (yellow or Dijon)

  • 1 tsp apple cider vinegar (optional, for tang)


Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.

  2. Make the meatloaf mixture:

    • In a large bowl, combine the ground beef, breadcrumbs, onion, garlic, milk, eggs, Worcestershire sauce, ketchup, salt, pepper, and seasonings.

    • Mix gently with your hands or a spoon until just combined—don’t overmix or it can get tough.

  3. Shape the loaf:

    • Transfer the mixture to the loaf pan or shape it into a loaf on a baking sheet.

  4. Make the glaze:

    • In a small bowl, mix together the ketchup, brown sugar, mustard, and vinegar.

    • Spread half of the glaze on top of the meatloaf.

  5. Bake:

    • Bake uncovered for 45 minutes, then spread on the remaining glaze.

    • Return to oven and bake for another 15–20 minutes, or until the internal temperature reaches 160°F (71°C).

  6. Rest & serve:

    • Let the meatloaf rest for 10 minutes before slicing to hold its shape.

    • Serve with mashed potatoes, green beans, or your favorite comfort sides.


🔁 Tips & Variations:

  • Want it juicier? Add ¼ cup of finely shredded carrots or zucchini.

  • Make-ahead: Assemble the meatloaf a day ahead and refrigerate, then bake when ready.

  • Leftovers: Make meatloaf sandwiches with slices the next day!
