Slow Cooker BBQ Ribs

Here’s a simple and delicious slow cooker BBQ ribs recipe that makes tender, fall-off-the-bone ribs with minimal effort:


Ingredients (serves 4–6)

  • 2–3 lbs (900–1350 g) pork ribs (baby back or spare ribs)
  • 1 cup BBQ sauce (your favorite brand or homemade)
  • 1/2 cup apple cider vinegar or apple juice
  • 2 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Prep the ribs
    • Remove the silver skin (thin membrane) from the back of the ribs for more tender meat.
    • Season both sides with salt, pepper, paprika, garlic powder, and onion powder.
  2. Place in slow cooker
    • Arrange the ribs in the slow cooker, curling them around the edges if necessary.
    • Pour apple cider vinegar or apple juice around the ribs (not on top, so seasoning stays).
  3. Cook low and slow
    • Cover and cook on low for 6–8 hours or on high for 3–4 hours until ribs are tender.
  4. Add BBQ sauce
    • About 30 minutes before serving, brush ribs with BBQ sauce.
    • Optional: Transfer to a baking sheet and broil for 3–5 minutes to caramelize the sauce.
  5. Serve
    • Slice between bones, drizzle with extra sauce, and serve with your favorite sides like coleslaw or mashed potatoes.

Tips for Perfect Slow Cooker Ribs

  • Don’t overcrowd: Place ribs in a single layer if possible for even cooking.
  • Check tenderness: Ribs should pull apart easily but not fall completely apart.
  • Enhance flavor: Add a few slices of onion or garlic cloves to the slow cooker for extra aroma.
