Strawberry Bread Recipe

Ingredients

  • 1½ cups fresh strawberries, hulled and finely chopped

  • 1¾ cups all-purpose flour

  • ¾ cup granulated sugar

  • ½ teaspoon salt

  • ½ teaspoon baking soda

  • ½ teaspoon baking powder

  • 1 teaspoon ground cinnamon (optional but recommended)

  • 2 large eggs

  • ½ cup vegetable oil (or melted butter, slightly cooled)

  • 1 teaspoon vanilla extract

  • ¼ cup sour cream or plain yogurt (adds moisture)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and lightly flour a 9×5-inch loaf pan or line it with parchment paper.

  2. Prepare the strawberries:
    Place the chopped strawberries in a small bowl. Lightly toss them with 1–2 teaspoons of flour to help prevent them from sinking during baking. Set aside.

  3. Mix dry ingredients:
    In a large bowl, whisk together the flour, sugar, salt, baking soda, baking powder, and cinnamon.

  4. Combine wet ingredients:
    In a separate bowl, whisk together the eggs, oil (or melted butter), vanilla extract, and sour cream (or yogurt) until smooth.

  5. Combine wet and dry mixtures:
    Pour the wet mixture into the dry ingredients. Stir gently until just combined; do not overmix.

  6. Fold in strawberries:
    Add the floured strawberries and fold them in carefully with a spatula. The batter will be thick.

  7. Bake:
    Spread the batter evenly into the prepared loaf pan. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.

  8. Cool:
    Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.


Optional Glaze (for extra sweetness)

  • ½ cup powdered sugar

  • 1–2 tablespoons strawberry puree or milk

  • ½ teaspoon vanilla extract

Whisk until smooth and drizzle over the cooled loaf.
