Here’s a moist and flavorful Strawberry Honeybun Cake with Strawberry Glaze — a fruity twist on the classic honeybun cake, combining the sweetness of strawberries with warm vanilla and cinnamon notes:


Strawberry Honeybun Cake with Strawberry Glaze

Ingredients

For the Cake:

  • 1 box strawberry cake mix (15.25 oz)

  • 4 large eggs

  • ¾ cup sour cream (or plain Greek yogurt)

  • ¾ cup vegetable oil

  • ½ cup buttermilk (or regular milk)

  • 1 teaspoon vanilla extract

  • ½ cup strawberry jam or preserves

For the Cinnamon Swirl:

  • ½ cup light brown sugar, packed

  • 1 tablespoon ground cinnamon

For the Strawberry Glaze:

  • 1 cup powdered sugar

  • 2–3 tablespoons strawberry puree or mashed fresh strawberries

  • ½ teaspoon vanilla extract

  • Optional: 1–2 drops red or pink food coloring for a vibrant color


Instructions

1. Preheat the Oven

Preheat to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.


2. Prepare the Batter

In a large bowl, mix together the cake mix, eggs, sour cream, oil, buttermilk, and vanilla until smooth. Do not overmix — just blend until no dry streaks remain.


3. Make the Cinnamon Swirl

In a small bowl, combine brown sugar and cinnamon.


4. Layer the Cake

  • Pour half of the batter into the prepared baking dish.

  • Drizzle half of the strawberry jam over the batter and gently swirl with a knife.

  • Sprinkle the cinnamon sugar mixture evenly over that layer.

  • Pour the remaining batter on top and swirl again lightly.

  • Drizzle the remaining strawberry jam on top and gently swirl for a marbled effect.


5. Bake

Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
Allow to cool for 10–15 minutes before glazing.


6. Make the Strawberry Glaze

In a small bowl, whisk together powdered sugar, strawberry puree, and vanilla until smooth and pourable. Adjust consistency with a little more puree or sugar as needed.


7. Glaze the Cake

Pour the glaze evenly over the slightly warm cake. Let it soak in for a few minutes before serving.


8. Serve

Slice into squares and serve warm or at room temperature. Delicious plain or topped with whipped cream and fresh strawberries.


Tips

  • Substitute cream cheese glaze for a richer version.

  • Use seedless strawberry jam for a smoother swirl.

  • Store covered at room temperature for up to 2 days or in the fridge for up to 5.
