Optional: ¼ cup chopped parsley or spinach for color

1. Prepare the Sweet Potato Base

Boil or steam sweet potatoes until soft. Drain and mash well.

Mix in eggs, Parmesan, salt, pepper, and spices. The mixture should be spreadable but not runny.

Line a baking sheet (roughly 12×10 inches / 30×25 cm) with parchment paper. Grease lightly.

Spread the sweet potato mixture evenly over the parchment to form a rectangle.

Bake at 375°F (190°C) for about 20–25 minutes, or until set and firm to the touch.
2. Cook the Minced Meat Filling

While the base bakes, heat oil in a skillet. Sauté onion until soft.

Add garlic and cook 1 minute.

Add ground meat, season with salt, pepper, herbs, and tomato paste.

3. Assemble the Rocambole
