Here’s a hearty, crowd-pleasing recipe for a Tater Tot Breakfast Casserole — loaded with crispy tots, fluffy eggs, melted cheese, and savory breakfast sausage (or bacon). It’s easy to prep ahead and perfect for brunches, holidays, or lazy weekend mornings.

🥔🍳 Tater Tot Breakfast Casserole

📝 Ingredients (Serves 6–8):

  • 1 (32 oz) bag frozen tater tots

  • 1 lb breakfast sausage (or bacon, cooked and crumbled)

  • 1 cup shredded cheddar cheese (or cheese blend)

  • 8 large eggs

  • 1 cup milk (whole or 2%)

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • Salt & pepper, to taste

  • Optional: ½ cup diced onions or bell peppers, sautéed

👨‍🍳 Instructions:

1. Preheat Oven:

  • Set to 350°F (175°C). Grease a 9×13-inch baking dish.

2. Cook the Sausage:

  • In a skillet, brown the sausage until fully cooked. Drain excess grease.

  • (If using bacon, cook until crispy, then chop or crumble.)

3. Assemble the Casserole:

  • Spread tater tots in a single layer in the baking dish.

  • Sprinkle cooked sausage (and veggies, if using) evenly over the tots.

  • Sprinkle cheese on top.

4. Make the Egg Mixture:

  • In a bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and pepper.

5. Pour & Bake:

  • Pour the egg mixture evenly over the casserole.

  • Bake uncovered for 45–50 minutes, or until eggs are set and top is golden.

🔄 Optional: Add extra cheese during the last 10 minutes of baking for a gooey top.

✅ Make-Ahead Option:

  • Assemble the night before (without baking), cover, and refrigerate.

  • In the morning, bake as directed — just add 5–10 minutes to the baking time.

🔄 Variations:

  • Use ham or chorizo instead of sausage.

  • Add spinach, mushrooms, or jalapeños for extra flavor.

  • Swap cheese for pepper jack, Swiss, or mozzarella.
